Enriched White Bread
My client, Joan, and I were talking today about white bread. She was telling me how many vitamins and minerals are removed from white bread, and she told me she heard this: They take twenty-something vitamins and minerals out of the wheat when they make white bread. Then they add 3 or 4 back, and call it "enriched." If someone took twenty-something dollars away from you and then gave you three back, would you considered yourself "enriched?" I loved that story. I'm sure I'm missing some details, and I don't know Joan's source, but I just love the quote. Awesome. So, throw out the white bread, pasta, and rice and go buy the whole-grain version. The best bread will say "100% whole wheat."
