Healthy Bean Enchiladas
A bean enchilada takes no more time to make than a peanut butter sandwich. It's convenient, cheap and easy. Best of all, you are only limited to your imagination when it comes to variations on the basic recipe.
Here is the basic recipe:
1 Smart and Delicious tortilla (from La Tortilla Factory) 1/4 cup of fat-free refried beans (any brand, from a can) 1/2 ounce shredded part-skim mozzarella cheese 1/4 cup of salsa (I use Pace picante sauce) 2 tablespoons light sour cream
Just spread the beans on the tortilla the way you would spread peanut butter. Sprinkle the cheese on top, then microwave for 30 seconds or until the cheese melts. Add the salsa and sour cream, and then fold over or roll up. Enjoy.
It takes about 2 minutes to make, but it will fill you up for hours. For added fiber, nutrients and wow-factor, add different vegetable toppings each time. Most veggies are so low-calorie that you don't even need to factor in the calories from them.
Some good options include:
bell peppers fresh mushrooms onions tomatoes lettuce or other greens corn cucumbers and anything else you can dream up!
*Note: avocado makes for a delicious addition- just be sure to note the calories.
